Newlywed Recipes: Apple cider turkey

Happy Halloween! I hope your weekends were filled with spookiness and sweet treats! In case you weren’t aware, tomorrow is November. November?! I’m not sure how that happened but none the less, it is time to start thinking about Thanksgiving (for those of us in the US). Today’s recipe is one of my favorites of all time. I whipped this up on a whim on a super cold day when we lived in Iowa. First, if you don’t have a crock pot/slow cooker go get one. Now. They are inexpensive and a gift from the kitchen gods. This recipe is amazing any time of year but if you are planning an intimate little Thanksgiving dinner this year with your new or soon to be spouse, and you don’t want to make an entire turkey, this could be the perfect option. It generally makes enough for 4 but you could also get another turkey loin if you were expecting more guests. No carving, no thawing, no guts or nasty stuff to remove, no stuffing… just throw it in the crock pot and walk away. Then of course, eat it up! The absolute best part is you can’t screw this up, I guarantee the turkey will come out tender and delicious.

Apple cider turkey loin

Serves 4-6

Ingredients:

  • 1 (24 ounce) turkey loin
  • 2 sweet potatoes, peeled and diced
  • 2 apples, diced
  • 1 cup baby carrots
  • 4 cups apple cider
  • 2 cups chicken broth
  • 1 cup brown sugar
  • 1 tablespoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cinnamon
  • Salt and pepper
  • 2 cinnamon sticks
  • Corn starch
